A quick and easy, tasty dish.

Serves 4.

Ingredients

4 salmon fillets 

2 tins of chickpeas, drained

Large red or orange pepper thinly sliced

tablespoon of Harissa powder

Olive oil

Preparation

Empty, chickpeas onto a flat baking tray. Add the sliced peppers, shake the Harissa powder over everything, then spray or pour olive oil over until everything is lightly covered.

Cooking

Roast in the oven for about 25 – 30 minutes at about 180°C or until everything is well cooked through and is beginning to turn lightly brown, (but before the chickpeas become too hard). 

Depending on the size and thickness of your salmon fillets, you might start cooking them at the same time, again sprayed with a little olive oil – but don’t allow them to dry out in the oven. 

When everything is cooked through, place, the salmon fillets amongst the chickpeas and peppers and serve with tender stem, broccoli, or any green vegetable.
