If there’s a feast being prepared at the Village Hall, Marian Potts will be at the heart of it, turning out delicious food for everyone. November’s recipe from Marian is short… and sweet… and just in time for Christmas!

I had this Recipe from an elderly aunt years ago. 

Ingredients
Welsh cake dough, omitting fruit (see June’s Recipe of the Month)
Mincemeat
Caster sugar to coat

Make dough as for Welsh cakes but do not add dried fruit. 
Roll out quite thinly and sandwich together with mincemeat ( I always use vegetarian).
Cook on griddle  quite slowly to allow for the extra thickness. 
Sprinkle with caster sugar and enjoy!
